  • 1 lb (450g) Ground Beef (80/20 blend)
  • 1 packet (1 oz) Taco Seasoning (low-sodium recommended)
  • 1/4 cup Water
  • 1 can (15 oz) Black Beans, rinsed and drained
  • 1 cup Corn Kernels (canned or frozen/thawed)
  • 1/2 cup Green Onions, thinly sliced
  • 1/2 cup Jalapeños, sliced (fresh or pickled)
  • 2 medium Tomatoes, diced
  • 1/2 cup Cilantro, chopped
  • 1 cup Sour Cream, for serving
  • 1 cup Guacamole, for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spread tortilla chips in a single, even layer on a large rimmed baking sheet.
  3. In a skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Cook until no pink remains (5-7 minutes), then drain excess grease.
  4. Add taco seasoning and water to the beef. Simmer for 2-3 minutes until liquid thickens, then remove from heat.
  5. Sprinkle half of the shredded cheese blend evenly over the chips.
  6. Scatter the seasoned beef and black beans over the cheese layer.
  7. Sprinkle the remaining cheese over the meat and beans.
  8. Bake in the preheated oven for 8-10 minutes until cheese is bubbly and slightly golden.
  9. Remove from oven and immediately sprinkle with corn, tomatoes, jalapeños, and green onions.
  10. Let rest for 2-3 minutes to allow cheese to set, then serve with sour cream and guacamole on the side.
