  • 2 cups (400g) granulated sugar
  • 1 cup (200g) brown sugar, packed
  • 1 cup (240ml) vegetable oil
  • 3 large eggs, at room temperature
  • 1 cup (240ml) buttermilk
  • 2 teaspoons vanilla extract
  • 3 cups diced apples (about 3 medium apples, peeled)
  • 1 cup (120g) chopped pecans or walnuts, toasted
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon ground nutmeg
  • For the caramel glaze: ½ cup (1 stick) unsalted butter, 1 cup (200g) brown sugar, ¼ cup (60ml) milk or heavy cream, 1 teaspoon vanilla extract, pinch of salt

Instructions

  1. Preheat your oven to 325°F (163°C). Position the rack in the lower third of the oven.
  2. Prepare your Bundt pan. Grease every nook and cranny with butter or shortening, then dust with flour. Tap out the excess.
  3. Peel and dice your apples into ½-inch chunks. Toss them with 2 tablespoons of flour from your measured amount.
  4. In a large bowl, whisk together the dry ingredients: flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
  5. In another bowl, whisk together the sugars, oil, eggs, buttermilk, and vanilla until smooth and well combined.
  6. Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined. A few streaks of flour are okay.
  7. Fold in the floured apples and toasted nuts gently.
  8. Pour the batter into the prepared pan. Spread it evenly and give the pan a gentle tap on the counter to release air bubbles.
  9. Bake for 55-65 minutes. Start checking at 55 minutes. A toothpick inserted near the center should come out clean or with a few moist crumbs.
  10. Cool in the pan for exactly 15 minutes. Set a timer.
  11. Invert onto a cooling rack. Give the pan a firm shake to release the cake. If it doesn’t come out immediately, let it sit for another 5 minutes and try again.
  12. Cool completely before glazing, about 1-2 hours.
