  • 4 cups fresh broccoli florets (about 10.5 ounces)
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup beef broth
  • 2 tablespoons brown sugar
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Optional: red pepper flakes to taste
  • Optional: sliced green onions for garnish
  • Optional: cooked jasmine rice or noodles for serving

Instructions

  1. Slice the beef thinly, about 1/4-inch thick, slicing against the grain for tenderness.
  2. In a mixing bowl, whisk together soy sauce, beef broth, brown sugar, minced garlic, grated ginger, sesame oil, and red pepper flakes if using.
  3. Place the sliced beef in the slow cooker and pour the marinade over it. Toss to coat evenly.
  4. Cover and cook on low for 5-6 hours or on high for 3-4 hours until beef is tender.
  5. About 30 minutes before the end of cooking, add the fresh broccoli florets on top of the beef. Cover and continue cooking.
  6. In a small bowl, mix cornstarch with cold water to make a slurry.
  7. Once cooking is done, remove the lid and slowly stir in the cornstarch slurry. Turn the slow cooker to high and cook uncovered for 10-15 minutes until the sauce thickens.
  8. Taste and adjust seasoning with more soy sauce or salt if needed.
  9. Garnish with sliced green onions before serving.
  10. Serve hot over cooked jasmine rice or noodles.
