Instructions

  1. Brown the butter: Melt 1/2 cup unsalted butter over medium heat in a saucepan, stirring constantly until golden and nutty. Remove from heat and let cool slightly.
  2. Peel and mash 3 ripe bananas in a large bowl with a fork or potato masher until mostly smooth with some small lumps.
  3. Add granulated sugar, brown sugar, and the slightly cooled brown butter to the mashed bananas. Stir gently to combine.
  4. Whisk in 2 large eggs, one at a time, then add 1 teaspoon vanilla extract. Mix until creamy.
  5. In a separate bowl, whisk together flour, baking soda, salt, and optional cinnamon.
  6. Gradually fold the dry ingredients into the wet banana mixture using a spatula, mixing just until combined to avoid toughness.
  7. Toast walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant and lightly browned, stirring often.
  8. Fold most of the toasted walnuts into the batter, reserving some to sprinkle on top.
