A comforting and easy slow cooker recipe featuring tender chicken breasts cooked in a creamy bacon sauce with ranch seasoning and cheddar cheese. Perfect for cozy dinners and crowd-pleasing meals.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 8 slices bacon, diced
  • 8 ounces cream cheese, softened
  • 1 packet ranch seasoning mix (about 1 tablespoon)
  • 1 cup shredded cheddar cheese (optional)
  • 23 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: almond flour or coconut flour for coating chicken
  • Optional: splash of chicken broth or water to adjust sauce consistency

Instructions

  1. Cook the bacon: Place diced bacon in a cold skillet over medium heat. Cook for 8–10 minutes, stirring occasionally, until crisp but not burnt. Use a slotted spoon to transfer bacon to a paper towel-lined plate. Leave some rendered fat in the pan.
  2. Prepare chicken: Season chicken breasts lightly with salt, pepper, and garlic powder. Optionally, sprinkle almond or coconut flour on each side for a slight crust.
  3. Brown the chicken (optional): In the same skillet with bacon fat, sear chicken breasts for 2-3 minutes per side until golden brown.
  4. Transfer chicken to slow cooker. Sprinkle cooked bacon evenly over the top.
  5. Add cream cheese and ranch seasoning: Dollop softened cream cheese over chicken and bacon. Sprinkle ranch seasoning evenly.
  6. Cook on low for 4-5 hours or on high for 2-3 hours until chicken is tender and easily shredded.
  7. Shred chicken directly in the slow cooker using two forks, mixing it with the creamy bacon sauce.
  8. Stir in shredded cheddar cheese and sliced green onions. Let melt for 5-10 minutes with the slow cooker lid off.
  9. Adjust seasoning with salt and pepper as needed. Add a splash of chicken broth or water if sauce is too thick.
  10. Serve hot over rice, mashed potatoes, or inside slider buns.

Notes

Always crisp the bacon before adding to the slow cooker to maintain texture. Softening cream cheese ahead helps it melt smoothly. Browning chicken is optional but adds flavor. Adjust sauce thickness with chicken broth or water as needed. For dairy-free, substitute cream cheese and cheddar with plant-based alternatives. Use almond or coconut flour for a gluten-free crust.
