  • 2 tablespoons vegetable or canola oil
  • 1 small onion, thinly sliced (optional)
  • 2 green onions, chopped (for garnish)
  • Red pepper flakes or fresh chili slices (optional)

Instructions

  1. Slice and marinate the beef: Thinly slice 1 pound flank steak against the grain into about 1/8-inch strips. In a bowl, combine beef with 1 tablespoon cornstarch, 1 tablespoon Shaoxing wine (or dry sherry), 1 teaspoon minced garlic, and 1 teaspoon grated ginger. Toss well and marinate for at least 10 minutes.
  2. Prepare the broccoli and aromatics: Wash and trim 4 cups broccoli florets. Thinly slice 1 small onion if using, and chop 2 green onions for garnish.
  3. Mix the stir fry sauce: In a small bowl, whisk together 3 tablespoons soy sauce, 2 tablespoons oyster sauce, 1 tablespoon hoisin sauce (optional), 1 tablespoon brown sugar or honey, and 1 teaspoon toasted sesame oil. Set aside.
  4. Cook the broccoli: Heat 1 tablespoon vegetable oil in a skillet or wok over medium-high heat. Add broccoli florets and sliced onion, stir-fry for 3-4 minutes until broccoli is bright green and crisp-tender. Remove from pan and set aside.
  5. Sear the beef: Add another tablespoon of oil to the hot pan. Add marinated beef in a single layer, cook about 2 minutes without stirring to sear, then stir-fry for another 1-2 minutes until browned but still juicy. Avoid overcooking.
  6. Combine and finish: Return broccoli and onions to the pan with beef. Pour in sauce mixture and toss to coat. Cook for 1-2 minutes until sauce thickens and clings to ingredients.
  7. Garnish and serve: Remove from heat, sprinkle chopped green onions on top, and serve immediately with steamed jasmine rice or fried rice.

Use tamari instead of soy sauce for gluten-free option. Slice beef thinly against the grain for tenderness. Avoid overcrowding the pan to maintain sear.
