These no-bake energy bites are made with ripe bananas, peanut butter, and oats for a wholesome, kid-approved snack that’s perfect for lunchboxes or on-the-go.

  • 2 ripe bananas, mashed
  • 1 cup creamy peanut butter
  • 1 ½ cups rolled oats
  • ⅓ cup honey or maple syrup
  • ½ cup mini chocolate chips (optional)
  • ¼ cup ground flaxseed or chia seeds (optional)
  • ¼ teaspoon salt (if peanut butter is unsalted)
  • ½ teaspoon vanilla extract

Instructions

  1. Mash the bananas: In a large mixing bowl, mash the bananas with a fork until mostly smooth.
  2. Add the wet ingredients: Add peanut butter, honey (or maple syrup), and vanilla extract to the bowl. Stir until completely combined into a thick, creamy paste.
  3. Mix in the dry ingredients: Add rolled oats, ground flaxseed (if using), and salt. Stir until oats are fully coated and evenly distributed. The mixture will be thick and sticky.
  4. Fold in the chocolate chips: Add mini chocolate chips and fold gently until evenly distributed.
  5. Chill the mixture: Cover the bowl and refrigerate for 20-30 minutes to make rolling easier.
  6. Roll into bites: Line a baking sheet with parchment paper. Using a cookie scoop or tablespoon, scoop portions and roll into smooth balls. You should get about 18-20 bites.
  7. Final chill: Place rolled bites on the lined sheet and refrigerate for at least 30 minutes to firm up.

Notes

Use very ripe bananas for natural sweetness. If mixture is too sticky after chilling, lightly wet hands with cold water before rolling. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
