  • 1.5 pounds (680 grams) boneless, skinless chicken breasts or thighs, cut into -inch cubes
  • 34 ripe but firm peaches, each cut into 8 wedges
  • ½ cup (120 ml) barbecue sauce
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon (15 ml) honey or brown sugar
  • 1 teaspoon (5 grams) kosher salt
  • ½ teaspoon (1 gram) black pepper
  • 1 teaspoon (3 grams) garlic powder
  • 1 teaspoon (2 grams) smoked paprika
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes)

Instructions

  1. Prep your grill: Clean grates, preheat to medium-high heat (400°F/200°C), and lightly oil the grates.
  2. Prepare the chicken: In a bowl, toss chicken cubes with salt, pepper, garlic powder, and smoked paprika. Let sit for 10 minutes.
  3. Prepare the peaches: In a small bowl, mix olive oil and honey. Brush lightly onto both sides of each peach wedge.
  4. Make the glaze: In another small bowl, combine barbecue sauce with 1 tablespoon water. Set aside.
  5. Assemble skewers: Thread chicken and peaches onto skewers, alternating and leaving a small gap between pieces. Start and end with chicken.
  6. Grill the peaches first: Place skewers on grill with peach sides down. Cook 2-3 minutes without moving, then flip and cook another 2 minutes on the other peach side.
  7. Finish cooking the chicken: Rotate skewers so chicken is in direct contact with grates. Cook 4-5 minutes per side, turning every few minutes, until chicken reaches 160°F (71°C). Total grill time about 10-12 minutes.
  8. Glaze and finish: During the last 3 minutes, brush barbecue glaze onto all sides of skewers. Let cook 1 minute per side until sticky.
  9. Rest before serving: Remove skewers from grill and let rest 3-5 minutes before serving.

Notes

For best results, use ripe but firm peaches. Par-grill peaches first to prevent mushiness. Apply glaze in the last 3 minutes to avoid burning. Let skewers rest before serving for juicier chicken.
