Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet or pan with parchment paper.
  2. Whisk dry ingredients: In a medium bowl, mix 2 ½ cups all-purpose flour, 1 tsp baking soda, and ½ tsp salt. Set aside.
  3. Cream butter and sugars: In a mixing bowl, beat 1 cup softened unsalted butter with ¾ cup granulated sugar and ¾ cup packed brown sugar until light and fluffy (3-4 minutes).
  4. Add eggs and vanilla: Beat in 2 large eggs, one at a time, then stir in 2 tsp vanilla extract until smooth and creamy.
  5. Combine wet and dry: Gradually add dry ingredients to wet, mixing on low speed until just combined. Avoid overmixing.
  6. Fold in chocolate chips gently.
  7. Shape the cookie cake: Transfer dough onto lined baking sheet or pan. Spread evenly into a 12-inch round shape, patting edges slightly thinner.
  8. Bake for 25-30 minutes until edges are golden brown and center is slightly soft.
  9. Cool completely on the baking sheet for at least 30 minutes before frosting.
  10. Make frosting: Beat ½ cup softened unsalted butter until creamy. Gradually add 3-4 cups sifted powdered sugar, alternating with 2-3 tbsp milk or cream, until smooth and spreadable. Stir in 1 tsp vanilla extract.
  11. Divide frosting into bowls and tint with gel food coloring to match school colors.
  12. Decorate: Spread a base layer of frosting, then pipe vibrant colors using piping bags and tips in desired patterns.
  13. Chill briefly if needed to set frosting. Serve at room temperature.
