  • 2 tablespoons (30g) chopped nuts like pistachios or almonds (optional)
  • A pinch of sea salt
  • Wooden skewers or bamboo sticks
  • Floral tape or ribbon (optional)

Instructions

  1. Wash and dry strawberries thoroughly. Pat dry with paper towels and let air dry for 30 minutes if needed.
  2. Set up a double boiler by simmering water in a small saucepan and placing a heatproof bowl on top. Add chopped semi-sweet chocolate and butter. Stir gently until smooth and glossy, about 5 minutes. Alternatively, melt chocolate in microwave in 30-second increments, stirring each time.
  3. Hold each strawberry by the green stem and dip into melted chocolate, swirling to coat about 3/4 of the berry. Let excess drip off. Place dipped strawberries on parchment-lined tray.
  4. Refrigerate dipped strawberries for 15-20 minutes to let chocolate set and harden.
  5. Melt white chocolate using the same method. Use a fork or small piping bag to drizzle white chocolate over the set strawberries for contrast and elegance.
  6. While white chocolate is still soft, sprinkle chopped nuts or a pinch of sea salt over the strawberries for texture and flavor balance.
  7. Carefully skewer each strawberry through the stem end. Arrange skewers in a vase or wrap them together like a flower bouquet. Secure with floral tape or ribbon.
  8. Keep the bouquet chilled until ready to serve, especially in warm weather, to prevent melting.

Notes

Ensure strawberries are completely dry before dipping to prevent chocolate from seizing or sliding off. Use good quality chocolate like Ghirardelli or Lindt for best results. Melt chocolate slowly over low heat and stir in a teaspoon of vegetable oil if it thickens too much. Chill strawberries to set chocolate but avoid freezing to prevent condensation. Work quickly when dipping as chocolate sets fast. For vegan or dairy-free, use dairy-free chocolate and substitute butter with coconut oil.
