  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups grated zucchini (squeezed to remove excess water)
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg until no lumps remain.
  3. In a separate medium bowl, whisk vegetable oil, granulated sugar, and brown sugar for 2 minutes until smooth.
  4. Add eggs one at a time to the wet mixture, mixing well after each addition. Stir in vanilla extract.
  5. Fold the grated zucchini into the wet mixture gently with a spatula.
  6. Pour the wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
  7. Fold in the chopped walnuts.
  8. Pour batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Squeeze excess water from the grated zucchini to prevent soggy bread. Do not overmix the batter to ensure a tender crumb. Toast walnuts beforehand for enhanced flavor. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
