A simple, moist, and flavorful pumpkin banana bread made in just one bowl. This easy recipe uses ripe bananas and pumpkin puree for a tender crumb that stays soft for days, perfect for cozy weekends.

Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 cup pumpkin puree
  • 3 large ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup walnuts, pecans, or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. Melt the butter in the microwave or on the stovetop and let it cool slightly.
  3. In a large mixing bowl, whisk together the melted butter, sugar, eggs, pumpkin puree, and mashed bananas until smooth.
  4. Add the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and vanilla extract to the wet ingredients.
  5. Stir gently with a fork or spatula just until the flour is incorporated. Do not overmix.
  6. Fold in optional add-ins like nuts or chocolate chips if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes. If the top browns too quickly after 45 minutes, cover loosely with aluminum foil.
  9. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe, blackened bananas for maximum sweetness and moisture. Do not overmix the batter once the flour is added to ensure a tender texture. The bread tastes even better the next day as the spices meld together. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
