Homemade Elderberry Syrup: Easy Immune Boosting Recipe

This homemade elderberry syrup with ginger and cinnamon is a delicious and effective immune booster. Made with simple ingredients, it’s perfect for cold season and tastes like a hug in a spoon.

  • 1 cup dried elderberries
  • 2-inch piece fresh ginger, sliced thin
  • 2 whole cinnamon sticks
  • 1 teaspoon whole cloves (optional)
  • 1 cup raw honey (or to taste)
  • 4 cups filtered water
  • 2 tablespoons lemon juice (optional)

Instructions

  1. Combine the dried elderberries, sliced ginger, cinnamon sticks, and cloves (if using) in a medium saucepan. Pour in the 4 cups of filtered water and stir to ensure the berries are submerged.
  2. Bring the mixture to a gentle boil over medium-high heat. Once bubbles break the surface, immediately reduce the heat to low to maintain a gentle simmer.
  3. Simmer uncovered for 30-40 minutes, stirring occasionally. The liquid will reduce by about half and turn a deep purple color.
  4. Remove from heat and let cool for 10-15 minutes to make handling safer.
  5. Strain the liquid through a fine-mesh strainer into a large bowl or measuring cup. Gently press on the berries with the back of a spoon to extract all the liquid, but avoid pressing too hard to prevent bitterness. Discard the solids.
  6. Let the liquid cool to about 110°F (warm but not hot to the touch). This is important to preserve the beneficial enzymes in the honey.
  7. Stir in the raw honey and lemon juice (if using) until fully dissolved. Taste and adjust sweetness or brightness as desired.
  8. Pour the syrup into a clean glass jar or bottle, leaving about half an inch of headspace. Seal tightly and let cool completely on the counter before refrigerating.

Notes

Do not add honey while the liquid is hot; wait until it cools to about 110°F to preserve beneficial enzymes. For a thicker syrup, simmer longer; for thinner, simmer less. Store in the refrigerator for 2-3 months or freeze in ice cube trays for longer storage. Avoid using fresh elderberries as they can be toxic raw.
