A quick, healthy, and creamy turkey chili made with white beans, lean ground turkey, and aromatic spices. This meal comes together in under 30 minutes and is perfect for busy weeknights.

  • 1 lb lean ground turkey (93% lean or higher)
  • 2 cans (15 oz each) white beans (Cannellini or Great Northern), do not rinse completely
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
  • 2 tbsp tomato paste
  • 1 cup low-sodium chicken broth
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Dice the onion and mince the garlic. Set aside.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and break it up with a wooden spoon. Cook until browned and no longer pink (5-7 minutes). Drain excess fat if necessary.
  3. Reduce heat to medium. Add diced onion to the pot and cook until translucent and soft (3 minutes). Add minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle chili powder, cumin, and smoked paprika over the meat and vegetables. Stir constantly for 60 seconds to bloom the spices.
  5. Add tomato paste and stir into the meat mixture. Cook for 1 minute to caramelize slightly.
  6. Pour in diced tomatoes (with juices), chicken broth, and white beans (including some liquid from the can). Stir to combine.
  7. Bring the mixture to a boil, then reduce heat to low. Simmer uncovered for 10 minutes until the sauce thickens.
  8. Taste and season with salt and black pepper. Adjust consistency with more broth if too thick, or simmer longer if too thin. Serve hot.

Notes

Do not rinse the white beans completely; save some of the liquid to help thicken the chili. For a creamier texture, mash about half of the beans against the side of the pot. If the chili tastes heavy, add a teaspoon of lime juice or apple cider vinegar to brighten the flavors. This recipe is naturally gluten-free, but ensure your broth and spices are certified gluten-free.
