  • 2 cups (180g) rolled oats
  • 1 cup (245g) pumpkin puree
  • 2 large eggs
  • 1/3 cup (80ml) maple syrup
  • 1/2 cup (120ml) milk (any kind)
  • 2 tablespoons (30ml) coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup (60g) chocolate chips (optional)
  • 1/4 cup (30g) chopped pecans or walnuts (optional)
  • 1/4 cup (30g) dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with silicone liners or grease it well.
  2. In a large bowl, whisk together the eggs, maple syrup, milk, melted coconut oil, and vanilla extract until smooth and slightly frothy, about 30 seconds.
  3. Add the pumpkin puree and whisk again until fully incorporated, about 20 seconds.
  4. Add the rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt. Stir with a spatula until evenly combined. Do not overmix.
  5. If using mix-ins, fold them in gently with 3-4 strokes of the spatula.
  6. Let the batter sit for 5 minutes to allow the oats to absorb the liquid.
  7. Scoop the batter into the prepared muffin cups, filling each to the top. Use an ice cream scoop or 1/3 cup measure.
  8. Bake for 20-22 minutes, or until the tops are set and lightly golden. A toothpick inserted in the center should come out clean or with a few moist crumbs.
  9. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. Enjoy warm or at room temperature.

Notes

Let the batter rest for 5 minutes before baking for softer cups. Use room temperature ingredients to prevent coconut oil from solidifying. Measure oats by spooning into the cup and leveling off. Cool completely before storing to avoid sogginess.
