  • 4 cups seedless watermelon, cubed
  • 1 cup crumbled feta cheese
  • A handful of fresh mint leaves, roughly chopped
  • 2 tablespoons extra-virgin olive oil
  • Juice of 1 lime (about 1 tablespoon)
  • Pinch of sea salt
  • Freshly ground black pepper, optional

Instructions

  1. Cut about 4 cups (600 grams) of seedless watermelon into roughly 1-inch cubes and keep chilled.
  2. Crumble 1 cup (150 grams) of feta cheese into small, uneven chunks.
  3. Wash and roughly chop about 12 fresh mint leaves.
  4. In a small bowl, whisk together 2 tablespoons (30 ml) of extra-virgin olive oil and juice from 1 fresh lime (about 15 ml). Add a pinch of sea salt and a few cracks of black pepper if desired.
  5. In a large mixing bowl, combine the watermelon cubes, crumbled feta, and chopped mint. Drizzle the dressing over and gently fold everything together with a wooden spoon or spatula, being careful not to crush the watermelon.
  6. Taste and adjust seasoning with more salt or lime juice if needed.
  7. Chill the salad in the refrigerator for 10-15 minutes before serving to let flavors meld.

Notes

Use firm, ripe watermelon with deep pink color for best sweetness. Avoid overmixing to prevent watermelon from becoming soggy. Fresh mint is essential for flavor; soak wilted mint stems in cold water to revive. Use quality feta cheese, preferably sheep’s milk feta, for best texture and taste. Salad is best served chilled or at cool room temperature and should be consumed within 1 day. For vegan adaptation, replace feta with marinated tofu or vegan cheese alternatives.
