Fresh Lemon Garlic Shrimp Skewers

These fresh lemon garlic shrimp skewers are a quick and easy summer BBQ favorite, featuring juicy shrimp marinated in a zesty lemon and garlic blend, grilled to perfection.

  • 1 pound large shrimp, peeled and deveined, tails on
  • 2 medium fresh lemons, juiced and zested
  • 4 large garlic cloves, minced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh parsley, finely chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • About 8 wooden or metal skewers (if wooden, soak in water for 30 minutes beforehand)

Instructions

  1. Prepare the marinade by combining lemon juice and zest, minced garlic, olive oil, chopped parsley, red pepper flakes (if using), salt, and pepper in a mixing bowl. Whisk well to blend flavors.
  2. Add the peeled and deveined shrimp to the marinade, toss gently to coat evenly, cover and refrigerate for 15-20 minutes. Do not marinate longer than 30 minutes.
  3. Soak wooden skewers in water for at least 30 minutes to prevent burning; if using metal skewers, have them ready.
  4. Remove shrimp from marinade and thread 4-5 shrimp per skewer, piercing through the tail and body, spacing evenly.
  5. Preheat grill to medium-high heat and lightly oil the grates to prevent sticking.
  6. Grill shrimp skewers for 2-3 minutes per side, turning once, until shrimp turn pink and opaque with slight char. Avoid overcooking.
  7. Remove skewers from grill and let rest for a couple of minutes before serving.

Notes

Do not marinate shrimp longer than 30 minutes to avoid ‘cooking’ them in lemon juice. Use tongs to turn shrimp to prevent piercing and drying out. Soak wooden skewers before grilling to prevent burning. Shrimp should curl into a loose ‘C’ shape when done. A quick squeeze of fresh lemon before serving adds extra brightness.
