Instructions

  1. Prepare the Cucumbers (15 minutes resting time): Wash and dry your cucumbers. If using English cucumbers, you can leave the skin on. Slice them into half-moons, about 1/4-inch thick. Place the slices in a colander set over a bowl or in your sink. Sprinkle generously with salt (about 1 teaspoon) and toss to coat. Let them sit for 15 minutes. After 15 minutes, rinse the cucumber slices briefly with cold water to remove the excess salt, then pat them dry with a clean kitchen towel or paper towels.
  2. Prepare the Red Onion (optional, 10 minutes): While the cucumbers are resting, thinly slice your red onion. If you want to mellow the sharpness, place the slices in a small bowl and cover them with cold water. Let them soak for 10 minutes, then drain and pat dry.
  3. Make the Vinaigrette (2 minutes): In a small bowl or a jar with a tight-fitting lid, combine the olive oil, red wine vinegar, minced garlic, Dijon mustard, dried oregano, a pinch of sugar (if using), and a pinch of salt and pepper.
