A quick, light, and refreshing salad combining crisp cucumbers and creamy avocado with a zesty lime dressing, perfect for summer lunches or as a vibrant side dish.

Ingredients

Scale
  • 2 medium cucumbers, peeled and thinly sliced (English or Persian cucumbers recommended)
  • 2 ripe avocados, diced
  • Juice of 2 fresh limes (about 3 tablespoons or 45 ml)
  • 2 tablespoons extra virgin olive oil
  • 1 small clove garlic, minced (optional)
  • 2 tablespoons fresh cilantro or parsley, finely chopped
  • 1/4 teaspoon red chili flakes (optional)
  • Salt and pepper to taste
  • 1/2 teaspoon honey or agave syrup (optional)

Instructions

  1. Prepare the cucumbers by peeling if desired and slicing thinly (about 1/8 inch thick). Scoop out seeds if large and watery. Place slices in a medium mixing bowl.
  2. Make the dressing by combining lime juice, olive oil, minced garlic, red chili flakes, salt, and pepper in a small bowl or jar. Whisk or shake until emulsified. Add honey or agave syrup if desired to balance acidity.
  3. Finely chop cilantro or parsley and set aside.
  4. Dice the avocados carefully to avoid mashing.
  5. Pour the dressing over cucumbers and toss gently to coat evenly. Add chopped herbs and mix lightly. Fold in diced avocado carefully to maintain texture.
  6. Optionally, let the salad rest for 5 minutes at room temperature to allow flavors to meld before serving.

Notes

Add avocado last to avoid browning and mushiness. Use fresh lime juice for best flavor. Optional honey balances acidity. Chill salad briefly before serving if desired. Avoid overmixing to prevent watery salad. Store leftovers in airtight container for up to 1 day; add fresh avocado before serving.
