  • 6 cups romaine lettuce, chopped
  • 2 cups cooked chicken breast, diced (rotisserie or grilled)
  • 1 large or 2 small ripe avocados, peeled and chopped
  • 3 large hard-boiled eggs, chopped
  • 1 cup cherry tomatoes, halved
  • 6 slices crispy bacon, crumbled
  • ½ cup blue cheese, crumbled
  • 1 medium cucumber, diced
  • For the dressing:
  • 1 medium ripe avocado
  • ¼ cup Greek yogurt (or dairy-free coconut yogurt)
  • 2 tablespoons fresh lemon juice
  • 1 small garlic clove, minced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. Wash and dry romaine lettuce thoroughly. Chop into bite-sized pieces and place in a large mixing bowl.
  2. If using raw chicken, season lightly with salt and pepper, then grill or pan-sear about 6-7 minutes per side until cooked through. Let rest 5 minutes, then dice. Alternatively, use rotisserie chicken.
  3. Hard-boil eggs by placing in a pot, covering with cold water, bringing to a boil, then simmering for 9 minutes. Cool in ice water, peel, and chop.
  4. Cook bacon in a cold skillet over medium heat until crisp, about 8-10 minutes, turning occasionally. Drain on paper towels and crumble once cool.
  5. Prepare the creamy avocado dressing by blending 1 ripe avocado, Greek yogurt, lemon juice, minced garlic, olive oil, honey, salt, and pepper until smooth and creamy (about 30 seconds). Adjust seasoning to taste.
  6. Add diced chicken, chopped eggs, halved cherry tomatoes, diced cucumber, crumbled bacon, and blue cheese to the romaine. Toss gently to combine.
  7. Pour the creamy avocado dressing over the salad and toss gently to coat evenly.
  8. Serve immediately for best freshness and crunch. If holding the salad, keep dressing separate and add just before serving.

Notes

Use ripe but firm avocados for best dressing texture. Reserve some bacon and blue cheese for garnish. Avoid overdressing to keep salad fresh and crisp. Dressing can be made up to 24 hours ahead and stored refrigerated. For dairy-free, substitute Greek yogurt with coconut yogurt and blue cheese with toasted nuts. For vegetarian, replace chicken and bacon with roasted chickpeas or grilled portobello mushrooms.
