Instructions

  1. Preheat oven to 375°F (190°C) with the rack in the center position.
  2. In a large bowl, toss sliced peaches with sugar, cornstarch, cinnamon, and lemon juice. Let sit for 15 minutes to draw out juices.
  3. Pour the peach mixture into a 9×13 inch baking dish and spread evenly.
  4. In a separate bowl, whisk together flour, baking powder, salt, and a pinch of sugar.
  5. Cut cold butter into small cubes and work it into the flour mixture using a pastry cutter or fingers until it resembles coarse crumbs.
