Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 packet (1 oz) ranch seasoning mix
  • 2 tablespoons milk
  • 1/4 cup finely chopped fresh dill (optional)
  • 810 slices deli turkey breast
  • 4 large flour tortillas (10-inch)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup finely shredded carrots
  • 1/4 cup finely chopped green onions
  • 1/2 cup baby spinach leaves, roughly chopped
  • 1/4 cup crispy bacon bits (optional)
  • 1/4 cup diced pickles or pickle relish (optional)
  • 1/4 cup sliced black olives (optional)

Instructions

  1. Soften the cream cheese: Take your cream cheese out of the fridge at least 30 minutes before you start. It needs to be at room temperature for a smooth, lump-free spread. If you’re in a hurry, microwave it in 10-second bursts until soft but not melted.
  2. Make the ranch spread: In a large mixing bowl, combine the softened cream cheese, ranch seasoning packet, and milk. Beat with a hand mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down the sides halfway through. The mixture should be light and spreadable, not stiff. If it’s too thick, add another tablespoon of milk. Stir in the chopped fresh dill if using.
  3. Prep your fillings: While the spread comes together, prep your veggies. Finely shred the carrots, chop the green onions, and roughly chop the spinach. Having everything ready makes assembly so much faster. Lay your turkey slices out on a plate so they’re easy to grab.
  4. Assemble the first tortilla: Lay one flour tortilla flat on your cutting board. Using a spatula or butter knife, spread about 3 tablespoons of the ranch cream cheese mixture evenly across the entire surface. Leave a 1/2-inch border around the edges to prevent filling from squeezing out when you roll. The layer should be even but not too thick—think peanut butter on a sandwich.
  5. Layer the fillings: Place 2-3 slices of turkey on the bottom third of the tortilla, slightly overlapping. You want a nice even layer of meat. Sprinkle about 1/4 cup of shredded cheddar cheese over the turkey, followed by 2 tablespoons each of shredded carrots and chopped spinach. Finish with a sprinkle of green onions. Don’t overstuff—less is more here, or your pinwheels will be too fat to slice neatly.
  6. Roll it up tight: Starting from the bottom edge (the side closest to you), begin rolling the tortilla away from you into a tight log. Use your fingers to tuck the filling in as you roll, keeping even pressure. Roll all the way to the top edge. The roll should be snug but not so tight that the filling squishes out the sides.
  7. Wrap and chill: Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap it tightly, twisting the ends like a candy wrapper to secure it. Place on a baking sheet or plate. Repeat with the remaining tortillas and filling. Refrigerate for at least 30 minutes, or up to 24 hours. This chilling step is crucial—it firms up the cream cheese and makes slicing clean and easy.
  8. Slice and serve: When you’re ready to serve, unwrap each roll and place it on a clean cutting board. Using a sharp serrated knife, slice the roll into 1-inch thick pinwheels. Use a gentle sawing motion rather than pressing straight down—this prevents squishing. You should get about 6-8 pinwheels per tortilla. Arrange them in a lunchbox or on a platter and watch them disappear.

Notes

Cream cheese must be soft for smooth spreading. Don’t overfill the tortillas. Chilling is essential for clean slices. Use a serrated knife for best results. These pinwheels taste even better the next day. Store in an airtight container in the fridge for up to 4 days. Freeze un-sliced rolls for up to 2 months.
