Easy Turkey Ranch Pinwheel Rolls - featured image

These Easy Turkey Ranch Pinwheel Lunchbox Rolls are a quick, no-cook lunchbox solution made with turkey, cream cheese, ranch seasoning, and cheddar cheese wrapped in a flour tortilla. Perfect for school lunches, road trips, or snacks, they come together in under 15 minutes and stay fresh for hours.

Ingredients

Scale
  • 4 (8-inch) flour tortillas (soft taco size)
  • 8 ounces cream cheese, softened
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 810 slices deli-style turkey (oven-roasted or smoked)
  • 1 cup shredded cheddar cheese
  • Lettuce leaves (optional, for crunch)

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 20 minutes before you start. You want it soft enough that you can press it with your finger and it leaves a dent. If you forget, microwave it for 10-15 seconds, but be careful not to melt it.
  2. Mix the ranch spread: In a small bowl, combine the softened cream cheese and the entire packet of ranch seasoning. Stir until completely combined and smooth.
  3. Lay out the tortillas: Place one tortilla flat on your cutting board. Use a spatula or butter knife to spread about 2 tablespoons of the ranch cream cheese mixture all the way to the edges. The layer should be thin but even, about 1/8 inch thick.
  4. Layer the turkey: Place 2-3 slices of turkey on top of the cream cheese, overlapping them slightly. You want full coverage, but don’t pile it too thick.
  5. Add the cheese: Sprinkle about 2 tablespoons of shredded cheddar over the turkey. Spread it out evenly, leaving a little space at the very edge of the tortilla.
  6. Add lettuce (optional): If you are using lettuce, place one or two leaves on top of the cheese. Make sure they are completely dry.
  7. Roll it up tight: Starting at the edge closest to you, begin rolling the tortilla away from you. Keep it tight but not so tight that the filling squishes out the ends. Roll all the way to the end, and press the seam gently to seal.
  8. Wrap and chill: Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap it tightly, twisting the ends like a candy wrapper. Repeat with the remaining tortillas. Refrigerate for at least 30 minutes, or up to overnight.
  9. Slice into pinwheels: When you are ready to serve, unwrap a roll and place it on the cutting board. Use a sharp serrated knife to slice off the uneven ends first. Then slice the roll into 1-inch thick rounds using a gentle sawing motion.
  10. Arrange and serve: Place the pinwheels in a lunchbox or on a platter. They are ready to go! If you are packing for later, store them in an airtight container in the fridge.

Notes

Don’t skip the chilling step—it helps the rolls hold their shape when slicing. Use a serrated knife for clean cuts. Pat lettuce bone-dry to prevent sogginess. The flavors improve after a few hours in the fridge. These pinwheels can be made up to 24 hours in advance. For a lower-sodium option, use low-sodium turkey and reduced-sodium ranch seasoning.
