Ingredients

Scale
  • 1 can (16 oz) refried beans (preferably Rosarita)
  • 1 packet (1 oz) taco seasoning (or 2 tablespoons homemade blend)
  • 1 lb ground beef (80/20)
  • 2 tablespoons water
  • 1/4 cup finely diced onion (optional)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup salsa (medium heat)
  • 2 cups shredded Mexican blend cheese (or cheddar jack)
  • 1 cup shredded lettuce (iceberg or romaine, finely chopped)
  • 1 medium tomato, diced and drained
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup sliced green onions
  • 1/2 cup sour cream (extra, for spiderweb design)
  • 1 plastic spider ring or olive spider for decoration (optional)
  • Tortilla chips (preferably Tostitos Scoops)

Instructions

  1. Cook the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until browned (6-8 minutes). Drain excess fat. Stir in taco seasoning and 2 tablespoons water. Simmer 2 minutes, then remove from heat and set aside to cool slightly.
  2. Mix the creamy layer: In a medium bowl, combine softened cream cheese, 1 cup sour cream, and salsa. Mix until smooth and well combined.
  3. Prepare the refried beans: In a small bowl, stir refried beans until smooth. Microwave for 30 seconds if needed to make spreading easier.
  4. Layer the base: Spread refried beans evenly across the bottom of a 9×13 inch serving dish.
  5. Add the meat layer: Sprinkle the seasoned ground beef evenly over the bean layer.
  6. Spread the creamy layer: Gently spread the cream cheese mixture over the meat, being careful not to mix the layers.
  7. Top with cheese: Sprinkle shredded Mexican blend cheese over the entire dish.
  8. Add cold toppings: Sprinkle shredded lettuce, diced tomato, black olives, and green onions over the cheese layer. Do this right before serving.
  9. Create the spiderweb: Fill a piping bag or zip-top bag with the extra 1/2 cup sour cream. Snip a tiny corner. Starting from the center, pipe a small circle, then concentric circles about an inch apart. Using a toothpick or knife tip, drag lines from the center outward through all circles to create a web pattern. Wipe the toothpick clean between each line.
  10. Add the spider: Place a plastic spider ring or make an olive spider (use a whole black olive for the body and slice another olive into legs) in the center of the web.
  11. Serve immediately: Surround the dish with tortilla chips. If making ahead, stop after step 7, refrigerate, and add cold toppings and spiderweb just before serving.

Notes

Drain tomatoes well to prevent watery dip. Soften cream cheese properly for a smooth layer. Chill dip for 15 minutes before piping the spiderweb to help it hold its shape. Use full-fat sour cream for the web for best results. For a vegetarian version, skip the meat and add black beans or plant-based crumbles.
