This easy slow cooker white chicken chili is creamy, hearty, and packed with flavor. It’s the perfect hands-off meal for busy weeknights, game day, or meal prep.

  • 1.5 lbs boneless, skinless chicken breasts (about 3 medium)
  • 2 cans (15 oz each) Great Northern beans, drained and rinsed
  • 2 cans (4 oz each) diced green chiles
  • 4 cups (32 oz) low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt and black pepper to taste (start with 1 tsp salt and ½ tsp pepper)
  • 4 oz Neufchâtel or cream cheese, softened and cubed
  • ¼ cup fresh cilantro, chopped, plus more for garnish
  • Juice of 1 lime (about 2 tablespoons)
  • Optional toppings: shredded Monterey Jack cheese, sliced avocado, sour cream or Greek yogurt, crushed tortilla chips, pickled jalapeños, extra cilantro, hot sauce

Instructions

  1. Prep your ingredients: Dice the onion and mince the garlic. Drain and rinse both cans of Great Northern beans. Cut the cream cheese into small cubes.
  2. Layer the ingredients in the slow cooker: Place chicken breasts in the bottom. Add diced onion, minced garlic, and drained beans on top. Sprinkle cumin, oregano, chili powder, salt, and pepper over everything. Pour in chicken broth and diced green chiles (with liquid). Stir gently to combine.
  3. Cook low and slow: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until chicken is cooked through and shreds easily.
  4. Shred the chicken: Remove chicken from slow cooker and shred with two forks. Return shredded chicken to the pot.
  5. Thicken the broth: Use an immersion blender to give the chili a few quick pulses (5-8 seconds) to blend about a third of the beans and broth. Alternatively, transfer 1 cup of chili to a blender, blend until smooth, and stir back in.
  6. Add cream cheese: Stir in cubed cream cheese until completely melted and incorporated (about 1-2 minutes). Let cook for another 10-15 minutes on LOW.
  7. Finish with fresh flavors: Stir in fresh cilantro and lime juice. Taste and adjust seasoning as needed.
  8. Serve and garnish: Ladle into bowls and top with desired toppings.

Notes

Don’t lift the lid and peek too often during cooking. For best results, let the chili rest on warm for 15-20 minutes before serving. The chili gets better after a day or two in the fridge.
