Easy Slow Cooker Buffalo Chicken Sliders - featured image

Tender, slow-cooked shredded chicken mixed with a spicy buffalo butter sauce, piled onto sweet Hawaiian rolls, topped with melted cheddar cheese, and broiled until golden. This set-it-and-forget-it recipe is perfect for game day or busy weeknights.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 cup buffalo sauce (e.g., Frank’s RedHot)
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 12 Hawaiian rolls or potato rolls
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 teaspoon garlic powder
  • 2 stalks green onions, sliced

Instructions

  1. In a medium bowl, whisk together the melted butter, buffalo sauce, minced garlic, and apple cider vinegar until smooth.
  2. Place chicken breasts in the bottom of a slow cooker. Pour the sauce mixture over the chicken, ensuring they are well coated.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken reaches an internal temperature of 165°F and shreds easily.
  4. Remove chicken from the slow cooker and reserve about 1/2 cup of cooking juices. Shred the chicken using two forks or a hand mixer.
  5. Return shredded chicken to the slow cooker and stir in the remaining sauce and reserved cooking juices until moist and coated.
  6. Slice the slider buns in half horizontally. Place the bottom halves on a baking sheet.
  7. Spread the shredded chicken mixture evenly over the bottom layer of buns. Sprinkle with shredded cheese and garlic powder.
  8. Place the top halves of the buns back on top. Turn oven to broil and broil for 2-3 minutes, watching closely, until cheese is bubbly and buns are toasted.
  9. Let cool for a minute, sprinkle with sliced green onions, and serve immediately with ranch or blue cheese dressing.

Notes

For a milder version, use half buffalo sauce and half ranch dressing. Chicken thighs can be used instead of breasts for a juicier result. If making ahead, cook and shred chicken up to 2 days in advance; assemble and broil when ready to serve. Store leftovers separately from buns to prevent sogginess.
