Easy Sheet Pan Pork Chops with Roasted Veggies

A quick and easy weeknight dinner featuring tender, seasoned pork chops and caramelized roasted vegetables cooked on a single sheet pan for minimal cleanup.

  • 1.5-inch thick bone-in or boneless pork chops
  • 2 tablespoons extra virgin olive oil (plus 1 tablespoon for veggies)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 large head of broccoli, cut into florets
  • 2 medium red bell peppers, sliced into strips
  • 1 large red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 1 large garlic clove, minced
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil and lightly spray with cooking spray.
  2. Pat pork chops dry with paper towels. In a small bowl, mix garlic powder, smoked paprika, dried thyme, salt, and pepper.
  3. Drizzle 2 tablespoons olive oil over the pork chops and rub in. Sprinkle the spice mix evenly over both sides, pressing spices into the meat. Set aside.
  4. In a large mixing bowl, toss broccoli, bell peppers, and onion with 1 tablespoon olive oil, minced garlic, salt, and pepper until coated.
  5. Spread vegetables on one side of the sheet pan, ensuring they are not crowded. Place pork chops on the other side.
  6. Roast in the preheated oven for 15 minutes.
  7. Remove pan from oven. Flip pork chops and stir vegetables. Add cherry tomatoes to the pan.
  8. Return to oven and roast for another 10-15 minutes, or until pork reaches an internal temperature of 145°F (63°C).
  9. Remove from oven and let pork rest for 5 minutes. Drizzle lemon juice over vegetables before serving.

Notes

Ensure vegetables are cut into uniform sizes for even cooking. Do not overcrowd the pan, as this causes steaming instead of roasting. Pork should reach an internal temperature of 145°F. Leftovers can be stored in an airtight container in the fridge for up to three days and reheated in the oven at 350°F to maintain texture.
