  • 2 medium delicata squash
  • 1/4 cup pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash the squash thoroughly. Cut off the stem and bottom ends, then slice in half lengthwise. Scoop out seeds and pulp.
  3. Lay squash halves cut-side down and slice into 1/2-inch thick half-moon slices.
  4. In a small bowl, whisk together olive oil, melted butter, maple syrup, thyme, garlic powder, salt, and pepper.
  5. Place squash slices in a large bowl and pour glaze over them. Toss until evenly coated.
  6. Line a large rimmed baking sheet with parchment paper. Arrange squash in a single layer, ensuring pieces are not touching.
  7. Roast for 20 minutes, then remove and flip each slice.
  8. Return to oven and roast for another 15-20 minutes until edges are crispy and centers are tender.
  9. Optional: Brush with extra glaze during the last 5 minutes for a sticky finish.
  10. Let cool for 5 minutes before serving.

Notes

Do not overcrowd the pan to ensure proper caramelization. Cut slices uniformly for even cooking. If using cold maple syrup, warm it slightly to make whisking easier. The skin is edible and does not need to be peeled.
