A simple and delicious side dish featuring roasted delicata squash with a sweet maple glaze, earthy sage, and warm spices. The skin is edible, requiring no peeling, making this a quick and healthy weeknight meal.

  • 2 medium delicata squash, washed and sliced into 1/2-inch rings with seeds removed
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh sage, chopped
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon flaky sea salt
  • 1/4 teaspoon freshly cracked black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash the delicata squash thoroughly and slice into 1/2-inch thick rings, removing seeds and pulp.
  3. Pat the squash rings dry with a paper towel.
  4. Place squash in a large mixing bowl and drizzle with olive oil, tossing to coat evenly.
  5. Sprinkle with cinnamon, salt, and pepper, tossing again to distribute spices.
  6. Arrange squash in a single layer on a large rimmed baking sheet, ensuring pieces are not touching.
  7. Roast for 20 minutes.
  8. Remove from oven and drizzle with maple syrup, tossing gently to coat.
  9. Return to oven and roast for another 15-20 minutes, watching closely to prevent burning.
  10. Squash is done when fork-tender and edges are caramelized.
  11. Remove from oven and immediately toss with butter and fresh chopped sage.
  12. Serve warm.

Notes

Do not overcrowd the pan to ensure roasting rather than steaming. Add maple syrup halfway through cooking to prevent burning. The skin is edible and does not need to be peeled. For extra crunch, sprinkle panko breadcrumbs during the last 5 minutes of roasting.
