  • 2 (6-inch) flour tortillas
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon butter or cooking spray
  • 1/4 cup ranch dressing

Instructions

  1. Prepare your ingredients. Shred your cheeses if using blocks. Measure out the ranch. Place a tortilla on a clean cutting board.
  2. Heat the skillet. Place a non-stick skillet over medium-low heat. Add 1/2 teaspoon of butter and let it melt, swirling to coat the pan. The butter should sizzle gently.
  3. Assemble the quesadilla. Place one tortilla in the skillet. Evenly scatter 1/4 cup mozzarella and 1/4 cup cheddar over half of the tortilla, leaving a small border. Fold the other half over the cheese. Press down gently with a spatula.
  4. Cook the first side. Cook for 2-3 minutes, until the bottom is golden brown and the cheese starts to melt.
  5. Flip it. Carefully slide a spatula under the quesadilla and flip it in one smooth motion. Cook for another 2-3 minutes, until the second side is golden and the cheese is fully melted.
  6. Rest and cut. Transfer the quesadilla to a cutting board. Let it rest for 30 seconds. Use a sharp knife or pizza cutter to slice it into 4-6 strips or triangles.
  7. Serve with ranch. Pour the ranch into a small bowl and arrange the dippers around it. Serve warm.

Notes

Medium-low heat is key to prevent burning. Don’t overstuff the quesadilla to avoid cheese spilling out. Let the quesadilla rest for 30 seconds before cutting to help the cheese set. For extra crispiness, cook in an air fryer at 375°F for 5-6 minutes, flipping halfway.
