  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup dry white wine (optional)
  • 1 tablespoon fresh parsley, chopped
  • Kosher salt
  • Black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat chicken thighs dry with paper towels and season both sides generously with salt and pepper.
  2. Heat a large skillet over medium-high heat and add olive oil.
  3. Sear chicken in a single layer for 5-6 minutes until golden brown, then flip and cook for another 4-5 minutes. Remove chicken to a plate.
  4. Reduce heat to medium. Add butter to the pan and melt. Add minced garlic and cook for 1 minute, stirring constantly.
  5. Pour in white wine (or extra broth) and scrape up brown bits from the bottom of the pan. Simmer for 2 minutes.
  6. Return chicken to the pan and spoon sauce over the top. Cover and simmer for 8-10 minutes until internal temperature reaches 165°F.
  7. Remove lid, sprinkle with fresh parsley, and let rest for 5 minutes before serving.

Notes

Ensure chicken is completely dry before searing to prevent steaming. Do not overcrowd the pan; cook in batches if necessary. Keep heat at medium when adding garlic to prevent burning. If using frozen chicken, ensure it is fully thawed and patted dry.
