These easy no-bake granola bars are a healthy, filling snack made with simple pantry ingredients like oats, peanut butter, and honey. They’re perfect for meal prep, lunchboxes, or a quick breakfast, and they stay chewy and delicious without any baking.

  • 2 cups (180g) rolled oats
  • 1 cup (250g) creamy peanut butter (natural, no-stir)
  • ½ cup (170g) honey
  • ¼ cup (60ml) coconut oil
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup (60g) dark chocolate chips
  • ½ cup (60g) dried cranberries

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Set aside.
  2. In a medium saucepan over low heat, combine peanut butter, honey, and coconut oil. Stir constantly with a silicone spatula until melted and smooth, about 3-4 minutes.
  3. Remove from heat and stir in vanilla extract and salt.
  4. In a large mixing bowl, combine rolled oats, chocolate chips, and dried cranberries. Stir to distribute evenly.
  5. Pour the warm peanut butter mixture over the oat mixture. Fold together with a silicone spatula until every oat is coated and no dry pockets remain.
  6. Transfer the mixture to the prepared pan. Use the back of a spoon or a flat-bottomed measuring cup to press the mixture down firmly and evenly, especially into the corners.
  7. Refrigerate for at least 2 hours, or overnight, until firm.
  8. Lift the block out using the parchment overhang. Place on a cutting board and cut into 12 even bars (3 rows by 4 rows) with a sharp chef’s knife, wiping the knife clean between cuts.

Notes

Press the mixture firmly into the pan to prevent crumbly bars. Chill for at least 2 hours before cutting. For cleaner cuts, wipe the knife between slices. The bars can be stored in the refrigerator for up to 2 weeks or frozen for up to 3 months.
