Ingredients

Scale
  • 2 cups water
  • 4 black tea bags (English Breakfast or Assam)
  • 1/2 cup pumpkin puree (100% pure, not pie filling)
  • 1/2 cup brown sugar, packed (light or dark)
  • 2 tablespoons honey
  • 1 tablespoon chai spice blend (or mix individual spices below)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • Pinch of black pepper (optional)

Instructions

  1. Pour 2 cups of water into a medium saucepan and heat over medium-high until steaming (small bubbles form, not a full boil).
  2. Add 4 black tea bags, reduce heat to medium-low, and steep for 5 minutes (7 minutes for stronger flavor).
  3. Remove tea bags, squeezing them against the side of the pot to extract flavor. Discard bags.
  4. Whisk in 1/2 cup pumpkin puree until smooth, about 30 seconds.
  5. Stir in 1/2 cup packed brown sugar and 2 tablespoons honey until completely dissolved.
  6. Add 1 tablespoon chai spice blend, 1 teaspoon cinnamon, 1/2 teaspoon ginger, 1/4 teaspoon cardamom, 1/4 teaspoon nutmeg, 1/8 teaspoon cloves, and a pinch of black pepper (if using). Stir well.
  7. Stir in 1 teaspoon vanilla extract.
  8. Bring mixture to a low simmer and cook for 5 minutes, stirring occasionally to prevent sticking.
  9. Remove from heat and let cool for 1 minute. Taste and adjust sweetness or spices as desired.
  10. Optional: Strain through a fine-mesh strainer into a glass jar for a smoother concentrate.
  11. Let cool to room temperature, then seal and refrigerate for up to 2 weeks.

Notes

For a dairy-free version, use oat milk. For an iced latte, pour concentrate over ice and add cold milk. The concentrate can be frozen in ice cube trays for up to 3 months. Double the batch for more servings.
