Easy Ham and Cheese Lunchbox Sushi Rolls

These quick and easy ham and cheese sushi rolls are perfect for lunchboxes. Made with simple ingredients like ham, cheddar, and sushi rice, they’re a kid-friendly twist on traditional sushi that even picky eaters will love.

  • 1 cup sushi rice, uncooked
  • 1 ¼ cups water
  • ½ teaspoon salt
  • 8 slices deli-style ham
  • 4 slices cheddar cheese (or ½ cup shredded)
  • 4 sheets nori
  • 2 tablespoons cream cheese, softened (optional)
  • 1 tablespoon toasted sesame seeds (optional)

Instructions

  1. Rinse 1 cup sushi rice in a fine-mesh strainer under cold water until the water runs clear. Transfer to a medium saucepan with 1 ¼ cups water and ½ teaspoon salt. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and let cool until warm but not hot.
  2. While rice cools, set up rolling station: lay a bamboo mat on a cutting board, place a nori sheet shiny side down on the mat. Have ham, cheese, and a small bowl of water ready. If using cream cheese, spread a thin layer on ham now.
  3. Wet hands with water. Spread about ½ cup cooled rice evenly over nori, leaving a 1-inch strip at the top edge uncovered. Layer 2 slices ham on rice, then 1 slice cheese (or 2 tablespoons shredded) on ham.
  4. Using the bamboo mat, lift the edge closest to you and roll away from you, tucking filling in as you go. Apply gentle, even pressure. When you reach the exposed nori strip, moisten it with water to seal. Finish rolling and press gently.
  5. Using a sharp knife, slice each roll into 6-8 pieces, wiping knife clean between cuts. Arrange on a plate or in a lunchbox. Sprinkle with sesame seeds if desired. Repeat with remaining ingredients to make 4 rolls total.

Notes

For best results, use room temperature ingredients. Wet hands prevent rice from sticking. Slice with a serrated knife using a sawing motion. Rolls can be made up to 24 hours in advance; store wrapped tightly in plastic wrap in the refrigerator and slice just before serving.
