A quick, healthy, and flavorful weeknight dinner featuring lean ground turkey and tender zucchini cooked in a single skillet with lemon and feta cheese.

  • 1 lb (450g) ground turkey (93% lean)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 2 medium zucchini, diced into half-inch cubes
  • 1 small red bell pepper, diced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh lemon juice
  • 0.5 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Prep the vegetables: Wash, dice the zucchini and bell pepper, dice the onion, and mince the garlic.
  2. Heat the pan: Place a large skillet over medium-high heat and add olive oil. Heat until shimmering.
  3. Cook the aromatics: Add diced onion with a pinch of salt and cook for 2-3 minutes until translucent. Add garlic and red bell pepper, cooking for another minute.
  4. Brown the turkey: Add ground turkey to the skillet, breaking it into crumbles. Cook for 5-7 minutes until browned and no longer pink.
  5. Add zucchini and spices: Stir in diced zucchini, oregano, red pepper flakes, salt, and pepper. Cook for 4-5 minutes until zucchini is tender but still has a slight bite.
  6. Finish with acid and cheese: Remove skillet from heat. Stir in lemon juice. Sprinkle feta cheese and parsley over the top, using residual heat to melt the cheese slightly.
  7. Serve immediately while hot.

Notes

Do not crowd the pan to ensure proper browning of the turkey. Add zucchini later in the cooking process to prevent it from becoming watery. If using 99% lean turkey, watch closely to prevent drying out. For a dairy-free option, skip the feta and add tahini.
