  • 23 tablespoons pizza sauce
  • 1/4 cup shredded mozzarella cheese
  • 810 mini pepperoni slices (optional)
  • Optional toppings: diced bell peppers, sliced olives, cooked crumbled sausage, mushrooms, pineapple

Instructions

  1. Prep your sauce: Spoon 2-3 tablespoons of jarred pizza sauce into a small leak-proof container. If making your own, mix 1/4 cup tomato sauce with 1/2 teaspoon Italian seasoning and a pinch of garlic powder. Let cool completely before packing.
  2. Portion your crackers: Count out 8-10 mini crackers per serving and place them in one compartment of your lunch box.
  3. Measure the cheese: Sprinkle about 1/4 cup of shredded mozzarella into another compartment.
  4. Add the pepperoni: Count out 8-10 mini pepperoni slices and place them in a third compartment.
  5. Prep any extra toppings: Dice any vegetables or other toppings into small, kid-friendly pieces (about 1/4 cup total).
  6. Pack it all up: Arrange everything in your bento box or lunch container. Make sure the sauce container is sealed tight.
  7. Add a napkin and instructions: Write a quick note explaining how to assemble the mini pizzas.

Notes

Do not assemble the pizzas ahead of time; the crackers will get soggy. Pack everything separately and let kids build their own at lunch. For best results, use sturdy crackers like whole wheat rounds or mini naan. Thicken jarred sauce by simmering for 5-7 minutes to prevent sogginess. Keep cheese cold with an ice pack.
