A super easy, 3-ingredient crockpot salsa chicken recipe that’s perfect for busy weeknights. Just chicken, salsa, and taco seasoning for a tender, flavorful meal that can be used in tacos, burrito bowls, salads, and more.

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 16 ounces (1 standard jar) salsa (chunky, medium-heat recommended)
  • 1 packet (2-3 tablespoons) taco seasoning

Instructions

  1. Place the chicken in the crockpot in a single layer.
  2. Sprinkle the taco seasoning evenly over the chicken.
  3. Pour the entire jar of salsa over the seasoned chicken. Do not stir.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken reaches 165°F and shreds easily.
  5. Remove chicken from crockpot, let rest for 1-2 minutes, then shred with two forks.
  6. Return shredded chicken to the pot, stir with salsa juices, and let sit on warm for 10-15 minutes.
  7. Serve immediately on warm tortillas, over rice, in salads, or as desired.

Notes

For best results, use a thick, chunky salsa. Avoid overcooking (more than 8 hours on low) to prevent mushy chicken. Double-check that the crockpot is plugged in before leaving. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
