A quick and easy weeknight meal featuring crispy bratwursts roasted with potatoes, cabbage, and onions on a single sheet pan, seasoned with caraway seeds and a tangy mustard-cider sauce.

  • 1.5 lbs Bratwurst Sausages (raw, natural casing)
  • 2 lbs Yukon Gold Potatoes (cut into 1-inch cubes)
  • 1 medium head Green Cabbage (cut into thick wedges)
  • 2 large Yellow Onions (quartered)
  • 1/2 cup Spicy Brown Mustard
  • 2 tbsp Dijon Mustard
  • 1/2 cup Apple Cider
  • 1 tsp Caraway Seeds
  • 3 tbsp Vegetable Oil
  • 4 cloves Garlic (minced)
  • 2 tbsp Fresh Parsley (for garnish)
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a large rimmed baking sheet.
  2. Toss potato cubes with 1 tablespoon oil, half the caraway seeds, salt, and pepper. Spread in a single layer on the bottom of the sheet pan.
  3. Toss cabbage wedges with 1 tablespoon oil, salt, and pepper. Arrange around the potatoes with the flat side down.
  4. Toss onion quarters with the remaining 1 tablespoon oil and scatter over the pan.
  5. Place raw bratwursts directly on top of the vegetables.
  6. In a small bowl, whisk together spicy brown mustard, Dijon mustard, apple cider, minced garlic, and remaining caraway seeds.
  7. Pour the sauce mixture over the brats and vegetables, basting the brats to coat them.
  8. Roast for 20 minutes.
  9. Remove from oven, flip the brats, and stir the vegetables. Return to oven and roast for another 15-20 minutes until potatoes are fork-tender and brats reach an internal temperature of 160°F (71°C).
  10. Remove from oven and let rest for 5 minutes.
  11. Sprinkle with fresh parsley and serve immediately with extra mustard on the side.

Notes

Do not prick the brats to keep them juicy. Ensure vegetables are in a single layer to prevent steaming. If using pre-cooked brats, add them in the last 15 minutes of cooking. Leftovers store well in the fridge for up to 3 days.
