Easy Creamy Cucumber Salad with Dill & Sour Cream

A refreshing summer salad made with crisp cucumbers, fresh dill, and a tangy sour cream dressing. Quick to prepare and perfect for cookouts or light lunches.

  • 2 large English cucumbers (or 3 medium Persian cucumbers)
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh dill, finely chopped
  • 1/2 cup sour cream (full-fat preferred)
  • 2 tablespoons white wine vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt, plus more for salting cucumbers
  • 1/4 teaspoon black pepper, freshly ground

Instructions

  1. Wash cucumbers thoroughly. If using English or Persian cucumbers, leave skin on; if using regular garden cucumbers, peel first. Cut off ends and slice into thin rounds, about 1/8-inch thick.
  2. Place sliced cucumbers in a colander set over a bowl or in the sink. Sprinkle with about 1 teaspoon salt and toss gently. Let sit for 15-20 minutes to draw out excess moisture.
  3. While cucumbers sit, thinly slice red onion. If desired, soak slices in cold water for 10 minutes to mellow bite, then drain and pat dry.
  4. In a small bowl, whisk together sour cream, white wine vinegar, olive oil, sugar, 1/2 teaspoon salt, and black pepper. Taste and adjust seasoning.
  5. After 15-20 minutes, rinse cucumbers under cold water to remove excess salt. Transfer to a clean kitchen towel or paper towels and pat dry thoroughly.
  6. In a large mixing bowl, combine dried cucumber slices, sliced red onion, and chopped fresh dill. Pour dressing over top and toss gently until evenly coated.
  7. Cover bowl and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

Don’t skip salting the cucumbers—it prevents a watery salad. Use full-fat sour cream for best texture. Fresh dill is essential; dried dill won’t work. Let salad rest at least 30 minutes before serving. Store leftovers in an airtight container in the fridge for up to 2 days.
