This easy copycat Starbucks pumpkin cream cold foam coffee is proof that you don’t need a drive-thru to enjoy your favorite fall drink. With just a few simple ingredients and about five minutes, you can create something that tastes even better than the original—and costs a fraction of the price.

  • 1 ½ cups cold brew coffee (store-bought or homemade)
  • Ice cubes
  • 12 tablespoons milk or cream (optional)
  • ¼ cup heavy cream
  • 2 tablespoons 2% milk or oat milk
  • 1 tablespoon pumpkin puree (100% pure, not pumpkin pie filling)
  • 1 tablespoon maple syrup (Grade A dark amber preferred)
  • ½ teaspoon vanilla extract (pure)
  • ¼ teaspoon pumpkin pie spice
  • Pinch of sea salt

Instructions

  1. Make the cold brew (or use store-bought). If making your own, combine ½ cup coarse-ground dark roast coffee with 2 cups cold water in a French press or jar. Stir gently, cover, and let steep in the fridge for 12-24 hours. Press or strain through a fine-mesh sieve. This makes enough for 2-3 servings.
  2. Fill your glass with ice. Use large ice cubes if possible. Fill the glass almost to the top.
  3. Pour the cold brew over the ice. Fill the glass about ¾ full, leaving room for the foam. If you like a lighter coffee, add a splash of milk or cream at this point.
  4. Make the pumpkin cream foam. In a small bowl or mason jar, combine the heavy cream, 2% milk, pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice, and a pinch of sea salt. Whisk or stir gently to break up the pumpkin puree.
  5. Froth the mixture. If using a mason jar, screw the lid on tight and shake vigorously for 30-45 seconds. If using a frother, blend for 15-20 seconds until thick and foamy with soft peaks. Do not over-froth.
  6. Pour the foam over the coffee. Use a spoon to gently layer the foam on top of the cold brew.
  7. Optional: dust with extra pumpkin pie spice.
  8. Serve immediately.

Notes

Temperature matters: everything needs to be cold. Don’t overdo the pumpkin—1 tablespoon is the sweet spot. Shake vigorously if using the mason jar method. Layer the foam over the back of a spoon for best presentation. The foam is best used immediately but can be stored in a sealed jar in the fridge for up to 2 days; re-froth before using.
