This easy copycat Starbucks pumpkin chai latte is a warm, spiced, and creamy fall drink made with real pumpkin puree and chai tea. It comes together in under 10 minutes and tastes better than the drive-through version.

  • 1 cup (240 ml) whole milk
  • 2 tablespoons (30 g) pumpkin puree
  • 1 tablespoon (12 g) granulated sugar
  • ½ teaspoon (2.5 ml) vanilla extract
  • ¼ teaspoon pumpkin pie spice
  • 1 cinnamon stick (optional, for steeping)
  • Whipped cream (for topping, optional)
  • Extra pumpkin pie spice or cinnamon (for garnish)

Instructions

  1. Steep the chai tea (3 minutes): In a small saucepan, bring ½ cup (120 ml) of water to a gentle boil. Remove from heat, add the 2 chai tea bags, and let them steep for 3 minutes. Remove the tea bags and gently squeeze out the liquid.
  2. Combine milk and pumpkin (2 minutes): Add 1 cup (240 ml) of whole milk to the saucepan with the steeped chai concentrate. Add 2 tablespoons (30 g) of pumpkin puree, 1 tablespoon (12 g) of sugar, ½ teaspoon (2.5 ml) of vanilla extract, and ¼ teaspoon of pumpkin pie spice. If using a cinnamon stick, add it now.
  3. Heat and whisk (3-4 minutes): Place the saucepan over medium-low heat. Whisk continuously as the mixture warms. Look for small bubbles to form around the edges—do not let it boil. The pumpkin puree will fully incorporate as the milk heats, turning a beautiful pale orange.
  4. Taste and adjust (30 seconds): Once the mixture is steaming and well combined, remove from heat. Taste it and adjust sweetness or spice as desired.
  5. Froth the milk (1 minute): If you have a frother, use it directly in the saucepan for about 20 seconds until the milk is foamy. If not, pour the mixture into a jar, seal it, and shake vigorously for 30 seconds. Pour back into the saucepan or directly into your mug.
  6. Pour and garnish (30 seconds): Pour the latte into your mug. If you want extra foam, spoon the froth on top. Add a dollop of whipped cream if using, and dust with a pinch of pumpkin pie spice or cinnamon.
  7. Serve immediately: This latte is best enjoyed fresh and hot.

Notes

Don’t boil the milk. Use real pumpkin puree, not pie filling. Steep the chai separately first for best flavor. Whisk continuously to prevent pumpkin from settling. For a dairy-free version, use oat milk. For an iced version, cool the mixture and pour over ice.
