  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 1/2 cup (113g) unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 1/2 cup (120ml) buttermilk
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 medium apples (about 300g total), peeled, cored, and diced into 1/2-inch cubes (Granny Smith, Honeycrisp, or Braeburn recommended)
  • 1/4 cup (50g) granulated sugar (for cinnamon sugar mixture)
  • 2 teaspoons ground cinnamon (for cinnamon sugar mixture)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving an overhang on the long sides. Lightly spray the parchment with non-stick spray.
  2. In a small bowl, whisk together 1/4 cup (50g) granulated sugar and 2 teaspoons ground cinnamon. Set aside.
  3. Peel, core, and dice apples into 1/2-inch cubes (about 2 cups). Toss with 2 tablespoons of the cinnamon sugar mixture. Set aside.
  4. In a large bowl, whisk together 2 cups (240g) all-purpose flour, 1 1/2 teaspoons baking powder, and 1/2 teaspoon salt. Set aside.
  5. In a separate medium bowl, whisk together 1/2 cup (113g) melted unsalted butter (cooled slightly), 1 cup (200g) granulated sugar, and 1/2 cup (100g) packed light brown sugar until smooth. Add 2 large eggs, one at a time, whisking well after each addition. Stir in 1/2 cup (120ml) buttermilk and 2 teaspoons vanilla extract until smooth and glossy.
  6. Pour the wet ingredients into the bowl with the dry ingredients. Fold with a rubber spatula until just combined (a few streaks of flour are okay).
  7. Gently fold in the cinnamon-sugar coated apples until evenly distributed.
  8. Pour half of the batter into the prepared loaf pan and spread into an even layer. Sprinkle generously with half of the remaining cinnamon sugar mixture. Spoon the remaining batter on top and spread gently. Sprinkle the top with the rest of the cinnamon sugar.
  9. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil after 35 minutes.
  10. Let the bread cool in the pan on a wire rack for 15 minutes. Then, using the parchment overhang, lift the bread out and transfer to the rack to cool completely before slicing.

Notes

For best results, use room temperature ingredients. Do not overmix the batter. Let the bread cool completely before slicing to prevent crumbling. The bread can be stored at room temperature for up to 3 days or frozen for up to 3 months.
