These Easy Cheese Quesadilla Dippers are a quick, kid-friendly lunchbox staple made with tortillas and cheese. Ready in under 10 minutes, they stay crispy and delicious at room temperature, making them perfect for busy mornings.

  • 4 (8-inch) flour tortillas
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 1 tablespoon butter or olive oil (for the pan)
  • Optional: salsa or marinara for dipping

Instructions

  1. Take shredded cheese out of fridge and let sit at room temperature for 5 minutes. Lay tortillas flat on a clean work surface.
  2. Sprinkle about ¼ cup mozzarella and 2 tablespoons cheddar onto one half of each tortilla, leaving a ½-inch border. Fold empty half over cheese half, pressing gently to seal.
  3. Place skillet over medium heat. Add about ½ tablespoon butter and let melt, swirling to coat pan.
  4. Place folded quesadilla in pan. Cook for 2-3 minutes until bottom is golden brown and crispy. Do not move it around.
  5. Flip gently with spatula. Cook other side for another 2-3 minutes until golden brown and cheese is fully melted.
  6. Transfer cooked quesadilla to cutting board and let rest for 30-60 seconds.
  7. Using pizza cutter or sharp knife, cut quesadilla into 3-4 strips (about 1-inch wide), then cut each strip in half crosswise to create 6-8 dippers per quesadilla.
  8. Let dippers cool on wire rack for at least 5 minutes before packing in lunchbox.

Notes

Don’t overstuff with cheese—leave a ½-inch border to prevent leaking. Use medium heat for best results. Let quesadillas rest before cutting to keep cheese inside. These taste better the next day and freeze well for up to 2 months.
