Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup cooked bacon, crumbled (about 68 strips)
  • 2 green onions, thinly sliced (optional)
  • 4 large flour tortillas (burrito size, about 10 inches)

Instructions

  1. Cook the bacon: In a skillet over medium heat, cook 6-8 strips of bacon until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain and cool completely. Once cool, crumble into small pieces.
  2. Make the filling: In a large mixing bowl, combine 8 oz softened cream cheese, 1/2 cup sour cream, and 1 packet ranch seasoning. Beat with a hand mixer on medium speed until smooth and fluffy, about 2-3 minutes. Scrape down the sides of the bowl halfway through.
  3. Add the mix-ins: Fold in 1 cup shredded cheddar cheese, the crumbled bacon, and sliced green onions (if using) with a rubber spatula until evenly distributed.
  4. Prepare the tortillas: Lay tortillas flat on a clean cutting board. If dry or stiff, microwave for 10-15 seconds to make more pliable.
  5. Spread the filling: Divide filling evenly among the 4 tortillas (about 1/2 cup per tortilla). Spread in an even layer, leaving about a 1-inch border around the edges.
  6. Roll them up: Starting at one edge, roll the tortilla tightly but gently. Use fingers to keep filling in place. Aim for a snug roll, then place seam side down.
  7. Wrap and chill: Wrap each rolled tortilla tightly in plastic wrap, twisting the ends like a candy wrapper. Place on a baking sheet or large plate and refrigerate for at least 1 hour, or up to 24 hours.
  8. Slice and serve: Unwrap rolls and place on a cutting board. Using a sharp serrated knife, slice each roll into 1-inch thick pinwheels using a gentle sawing motion. You should get about 8-9 pinwheels per tortilla.
  9. Arrange and enjoy: Arrange pinwheels on a serving platter. Garnish with extra green onions or a sprinkle of paprika if desired. Serve immediately or keep refrigerated until game time.

Notes

Don’t skip the chilling step—it firms up the filling for clean slices. Use room temperature cream cheese for a smooth filling. For extra crispy bacon, cook until very crispy before crumbling. For a spicy variation, add 2-3 tablespoons buffalo sauce and swap cheddar for blue cheese. For a vegetarian option, omit bacon and add roasted red peppers and sun-dried tomatoes.
