  • 1/4 cup creamy peanut butter
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 1 to 2 tablespoons warm water (as needed)
  • Optional toppings: mini chocolate chips, toasted coconut flakes, crushed peanuts, granola, dried cranberries, cinnamon

Instructions

  1. Core and slice the apples. Wash the apples thoroughly. Cut them in half through the stem, then cut each half into quarters. Remove the core and seeds from each quarter. Slice each quarter into 3 to 4 wedges, about 1/4-inch thick.
  2. Arrange the apple slices on a serving plate in a single layer, slightly overlapping if needed.
  3. Make the peanut butter drizzle. In a small microwave-safe bowl, combine 1/4 cup creamy peanut butter, 2 tablespoons honey, 1/2 teaspoon vanilla extract, and a tiny pinch of salt. Microwave on high for 20 seconds. Stir well.
  4. Adjust the consistency. Add 1 tablespoon of warm water and stir vigorously. The drizzle should be smooth, glossy, and thin enough to pour from a spoon in a steady stream. If still too thick, add another teaspoon of warm water and stir again.
  5. Drizzle over the apples. Using a spoon, drizzle the peanut butter mixture back and forth across the apple slices.
  6. Add toppings. Sprinkle your chosen toppings over the drizzled apples. If using chocolate chips, add them while the drizzle is still warm.
  7. Serve immediately. Apple nachos are best eaten right away while the apples are still crisp and the drizzle is soft.

Notes

For best results, slice apples just before serving to prevent browning. If prepping ahead, toss slices in lemon juice. The drizzle can be made ahead and stored in the refrigerator for up to a week. For a vegan version, use maple syrup instead of honey. For a nut-free version, use sunflower seed butter.
