  • 1 teaspoon vanilla extract
  • 1/2 cup caramel sauce, plus more for drizzling
  • 23 medium apples, sliced for dipping
  • Optional toppings: crushed graham crackers, chopped pecans, or a sprinkle of sea salt

Instructions

  1. Soften the cream cheese: Take your cream cheese out of the fridge about 30 minutes before you start. Unwrap it and let it sit on the counter. If you’re in a rush, cut it into smaller cubes — they’ll soften faster.
  2. Beat the cream cheese: Place the softened cream cheese in your mixing bowl. Beat it with a hand mixer on medium speed for about 2 minutes, until it’s completely smooth and fluffy. Scrape down the sides of the bowl halfway through.
  3. Add the brown sugar and vanilla: Add the packed brown sugar and vanilla extract to the bowl. Beat on medium speed for another minute until everything is well combined and the sugar has dissolved into the cream cheese.
  4. Mix in the caramel sauce: Pour in the 1/2 cup of caramel sauce. Beat on low speed until just combined. Don’t overmix — you want the caramel to swirl through the cream cheese, not completely blend in.
  5. Taste and adjust: Give it a taste. Need more sweetness? Add a little more brown sugar. Want more caramel flavor? Drizzle in another tablespoon of caramel sauce.
  6. Transfer to serving bowl: Scoop the dip into your serving bowl and spread it out evenly. Drizzle a little extra caramel sauce on top in a zigzag pattern. If you’re using toppings, sprinkle them on now.
  7. Slice the apples: Right before serving, core and slice your apples into wedges about 1/2 inch thick. If not serving immediately, toss the apple slices in a little lemon juice to keep them from browning.
  8. Serve immediately: This dip is best enjoyed right away while it’s still soft and creamy. Set it out with the apple slices and watch it disappear.

Notes

For best results, ensure cream cheese is at room temperature to avoid lumps. Do not overmix the caramel to keep beautiful ribbons. Granny Smith apples are recommended for their tartness. The dip can be made ahead and stored in the fridge for up to 3 days; let it sit at room temperature for 15 minutes before serving.
