  • Unsweetened cocoa powder, for dusting
  • Sea salt flakes (optional)

Instructions

  1. Finely chop 8 ounces of dark chocolate and place in a heatproof bowl.
  2. Warm 1/2 cup heavy cream and 2 tablespoons unsalted butter in a small saucepan over medium heat until butter melts and mixture begins to simmer; do not boil.
  3. Pour the hot cream and butter mixture over the chopped chocolate. Let sit for 2 minutes to soften the chocolate.
  4. Gently stir with a spatula or whisk until smooth and shiny. Add 1 teaspoon vanilla extract and 1/4 teaspoon espresso powder if using, then mix well.
  5. Cover the bowl with plastic wrap and refrigerate for at least 2 hours until firm but pliable (1 hour if short on time).
  6. Using a small ice cream scoop or teaspoon, scoop out small balls about 1 inch in diameter. Roll quickly between palms to smooth the shape. Chill again if ganache softens too much.
  7. Place cocoa powder in a shallow bowl and roll each truffle until evenly coated. Optionally, sprinkle a pinch of sea salt flakes on some truffles.
  8. Transfer truffles to an airtight container and refrigerate. Best enjoyed within a week.
