  • 1 pound (450 g) sausage links or bulk sausage (Italian or smoked sausage recommended)
  • 4 medium russet or Yukon gold potatoes, peeled and diced into 1-inch cubes
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 medium bell pepper, diced (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme or rosemary
  • A handful fresh parsley, chopped (optional)

Instructions

  1. Peel and dice 4 medium potatoes into roughly 1-inch cubes. Rinse under cold water to remove excess starch and pat dry thoroughly.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add 1 pound sausage, breaking it up if bulk sausage. Cook 6-8 minutes until browned and cooked through. Remove sausage and set aside.
  3. In the same skillet, add 1 tablespoon olive oil and 1 tablespoon butter. Once hot, spread potatoes in an even layer. Cook undisturbed for 4-5 minutes to develop a golden crust. Flip and stir occasionally for a total of 15 minutes until tender and crispy.
  4. Add diced onion and bell pepper (if using). Cook 5 minutes, stirring until softened. Add minced garlic in the last minute to avoid burning.
  5. Return cooked sausage to skillet. Stir in smoked paprika, dried thyme or rosemary, salt, and pepper. Cook 2-3 minutes to combine flavors.
  6. Taste and adjust seasoning. Garnish with chopped fresh parsley before serving.

Notes

Dry potatoes thoroughly before cooking to ensure crispiness. Avoid overcrowding the pan to prevent steaming. Add garlic at the end to avoid burning. Use medium heat for best results. Leftovers reheat well in a skillet or oven to maintain crispiness.
