This crispy Parmesan roasted delicata squash is a quick and easy 30-minute side dish that delivers golden, cheesy edges and a creamy interior. It’s a crowd-pleasing fall recipe that feels fancy but takes almost no effort.

  • 2 medium delicata squash (about 1.5 pounds total)
  • ½ cup finely grated Parmesan cheese (preferably Parmigiano-Reggiano)
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon fine sea salt (or ¼ teaspoon table salt)
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon fresh parsley or thyme, chopped (optional garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Position the rack in the middle of the oven. Line a baking sheet with parchment paper or foil.
  2. Wash the delicata squash thoroughly, pat dry, and cut off both ends. Slice in half lengthwise and scoop out the seeds and stringy pulp. Place each half cut-side down and slice crosswise into ½-inch thick half-moons.
  3. In a large bowl, combine the sliced squash, olive oil, garlic powder, salt, and pepper. Toss until every piece is evenly coated.
  4. Arrange the seasoned squash slices in a single layer on the prepared baking sheet. Do not overlap.
  5. Sprinkle the grated Parmesan evenly over the squash slices. Do not toss.
  6. Roast for 15 minutes. Remove the pan, flip each piece of squash gently, and return to the oven.
  7. Roast for another 10-15 minutes, until the squash is tender when pierced with a fork and the cheese is deep golden brown and crispy. Start checking at the 10-minute mark.
  8. Let the squash rest on the baking sheet for 2-3 minutes. Transfer to a serving platter, scraping up any crispy cheese bits. Garnish with fresh herbs if desired. Serve warm.

Notes

For extra crispy cheese, use finely grated fresh Parmesan and sprinkle it on top after arranging the squash on the pan. Don’t skip flipping the squash halfway through. Watch the cheese closely as it can burn quickly. If your oven runs hot, reduce temperature to 400°F (200°C) and add a few minutes to the cooking time.
