  • 1 medium butternut squash (about 23 lbs), peeled, seeded, and cut into fry-shaped sticks
  • 3 tablespoons olive oil
  • 1 cup grated Parmesan cheese, divided
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Prepare the butternut squash: Cut off both ends, peel with a vegetable peeler, cut in half where the narrow neck meets the bulbous bottom, cut each half lengthwise, scoop out seeds, and cut into fry-shaped sticks about 1/4 to 1/2 inch thick and 3 inches long.
  3. Dry the squash sticks thoroughly with a clean kitchen towel or paper towels to remove excess moisture.
  4. In a large bowl, toss the squash sticks with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  5. Sprinkle about 3/4 cup of the grated Parmesan over the squash and toss again. Reserve the remaining 1/4 cup.
  6. Arrange the squash fries in a single layer on the prepared baking sheet, making sure they are not touching. Use two sheets if needed.
  7. Bake for 15 minutes. Remove from the oven and carefully flip each fry using tongs or a spatula.
  8. Sprinkle the reserved 1/4 cup of Parmesan over the fries.
  9. Bake for another 10-15 minutes, until golden brown and crispy on the edges. Total bake time is about 25-30 minutes.
  10. Let the fries rest on the baking sheet for 2-3 minutes before transferring to a serving platter. Garnish with fresh parsley and serve immediately.

Notes

For extra crispiness, ensure squash is thoroughly dried before tossing with oil. Do not overcrowd the pan; use two baking sheets if necessary. Serve immediately for best texture. Leftovers can be reheated in the oven or air fryer at 400°F for 5-7 minutes.
